  1. 1 (11- to 12-ounce) bottle stout or porter, such as Guinness

  2. 1/4 cup finely chopped fresh basil leaves

  3. 1/4 cup finely chopped shallots (from about 1 large)

  4. 1 tablespoon finely grated lime zest (from about 3 medium)

  5. 1/4 cup freshly squeezed lime juice (from about 3 medium)

  6. 3 medium garlic cloves , minced

  7. 2 tablespoons finely chopped fresh tarragon

  8. 1 tablespoon finely chopped fresh thyme leaves

  9. 1 tablespoon freshly ground black pepper

  10. 1 teaspoon kosher salt

  11. 1/3 cup extra-virgin olive oil

  1. Place all ingredients except the oil in a blender or food processor fitted with a blade attachment and blend or process on high speed until smooth. While the motor is running, slowly drizzle in the oil until combined. Refrigerate in an airtight container for up to 1 week.
