  1. 5-6 Bell pepper s of all colors

  2. 4 garlic cloves

  3. 1 can diced tomato es

  4. Salt

  5. Pepper

  6. 3 T olive oil

  7. 1-2 T tomato paste

  1. Broil peppers till just black. Let cool and remove skins and seeds. Slice lengthwise and chop garlic. Put in a shallow stock pot with olive oil. Saute together till well heated. Add tomatoes and simmer for 45 minutes. Add the tomato paste at the end if you like a thicker consistency. (I always do this).
