  1. 2 pound(s) sweet potato , fresh

  2. 2 pound(s) red bliss potato , fresh

  3. 1 bunch(es) cliantro , not wilted fresh

  4. 1 large lime , fresh

  5. 1 bunch(es) scallions , fresh

  6. 3 piece(s) garlic , fresh

  7. 5 tablespoon(s) mayo , preferrably Hellmans regular

  1. boil sweet potato's until lightly firm

  2. boil red bliss potato's until lightly firm

  3. remove from heat and peel

  4. quarter them into a bowl

  5. add salt and pepper(your descretion)

  6. chopped up cilantro, scallions and garlice

  7. add them to the potato's

  8. add the mayo next

  9. mix it all up and chill for about 3 hours or until nice and cold

  10. serve in a nice bowl and garnish with paprika and parsely
