  1. 1 lb. skinless, boneless chicken breasts or 1 lb. pork

  2. 1 tbsp. Hoisin sauce

  3. 1/2 tsp. crushed dried red pepper

  4. 1/2 tsp. catsup

  5. 1/4 c. chicken stock or broth

  6. 1 1/2 tbsp. vegetable oil

  7. 1 1/2 tsp. garlic, finely chopped, about 2 cloves

  8. 2 scallions, slivered

  9. 1 c. bean sprouts

  10. 1 tbsp. sesame oil

  1. Cut chicken or pork into pieces about 1x1/2". Sprinkle marinade ingredients on chicken, and mix well. Marinate 1 hr., or overnight.

  2. Mix Hoisin sauce, red pepper, ketchup, and stock. Set aside.

  3. Heat wok, and add oil. Stir-fry garlic for 30 secs.

  4. Add meat, and stir-fry 3 mins., over high heat.

  5. Add sauce mixture, and mix well. Cover, and cook 1 min.

  6. Add onion and bean sprouts, and stir-fry 1 min.

  7. Add sesame oil. Mix well, and serve.
