  1. 1/2 cup water

  2. 4 tablespoons sugar

  3. 4 sprigs mint -- leaves removed from

  4. 1 stalk yield about 20 mint leaves

  5. 2 cups packed diced fresh pineapple

  6. 4 tablespoons light rum

  1. Preparation : Combine water, sugar and mint leaves in a small pan. Simmer ten minutes and then cool completely. Stir in pineapple and rum. Process until pulpy in a blender or food processor. Process in an ice cream freezer according to manufacturer's instruction
