  1. 1 tablespoon 15ml Canola oil

  2. 1 1/2 cups 355ml Fat-free reduced-sodium chicken broth

  3. (or water)

  4. 1/2 cup 73g / 2.6oz Chopped scallions

  5. 1 cup 237ml Plain couscous

  6. 2 tablespoons 30ml Chopped flat-leaf parsley -

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. In a medium saucepan, combine the oil and chicken broth or water, and bring to a simmer. Stir in the scallions and couscous and cover the pan. Remove the pan from the heat and let stand for 5 minutes.

  2. When the couscous has absorbed all the liquid, fluff it with a fork, and add the parsley, if using, and salt and pepper. Serve warm.

  3. This recipe yields 4 to 6 servings.
