  2. 4 large tart, crisp apples

  3. 4 large sweeter apples (not mealy ones, though)

  4. 1/2 cup granulated sugar

  5. 1/3 cup all-purpose flour

  6. 1/4 tsp mace

  7. 1/8 tsp ground Cloves

  8. 1/4 tsp cinnamon

  9. 2 Tbsp melted butter

  10. 1/8 tsp fresh squeezed lemon juice, strained

  11. double pie crust, unbaked

  12. Peel, core and slice apples, placing them in a large mixing bowl.

  13. Mix sugar, flour, mace, cloves and cinnamon. Add sugar mixture to

  14. the apples and mix well. Mix melted butter and lemon juice and pour this over the apples. Mix well and let sit for at least 20

  15. minutes while you prepare the piecrust. Preheat oven to 450 degrees.

  16. Prepare top and bottom crusts. Mound filling into pie shell, piling

  17. apples high, and affix the top crust. Slash top crust a few times

  18. and brush with glaze mixture of egg yolk with 1 Tbs. of cream.

  19. 450 degrees for 375 degrees and bake about 35-45 minutes

  20. more, checking frequently to make sure crust doesn't over brown.
