  1. 1 tablespoon vegetable oil

  2. 1 medium onion -- chopped

  3. 2 cloves garlic -- minced

  4. 1 1/2 teaspoons chili powder

  5. 1/2 teaspoon cumin

  6. 3 cups brown rice -- cooked

  7. 1 16 oz can black beans -- drained and rinsed

  8. 1 11 oz can corn -- drained

  9. 6 8 inch flour tortillas

  10. 3/4 cup reduced-fat cheddar cheese -- (6 ounces), shredded

  11. 2 green onions -- thinly sliced

  12. 1/4 cup plain low-fat yogurt

  13. 1/4 cup prepared salsa

  1. Preparation : Heat oil in large skillet over medium-high heat until hot. Add onion, garlic, chili powder and cumin. Saute 3 to 5 minutes until onion is tender. Add rice, beans and corn, and cook, stirring, 2 to 3 minutes until mixture is thoroughly heated. Remove from heat.
