  1. 2 cups 125g / 4.4oz Chopped Vidalia onions

  2. 2 cups 292g / 10oz Chopped cabbage

  3. 2 cups 292g / 10oz Chopped green peppers

  4. 2 cups 292g / 10oz Chopped red peppers

  5. 1/2 cup 118ml Salt

  6. 2 cups 396g / 13oz Sugar

  7. 2 cups 474ml Vinegar

  8. 1 tablespoon 15ml Celery seed

  9. 1 tablespoon 15ml Mustard seed

  1. Wash and chop vegetables. Dissolve salt in water and pour over vegetables. Let stand overnight (12 hours). Drain and rinse. Cover with fresh water and let stand 1 hour.

  2. Dissolve sugar in vinegar, add spices and bring to a boil. Add drained vegetables and simmer 15 minutes. Bring to a full boil. Pack into sterilized jars and process in water bath 15 minutes.

  3. This recipe yields 3 pints.
