  1. 2 cups 80g / 2.8oz Washed arugula leaves

  2. 1/4 cup 15g / 1/2oz Thinly-sliced red onion

  3. 1 Orange

  4. 1 teaspoon 5ml White wine vinegar

  5. 1 tablespoon 15ml Vanilla-Infused Oil - seeNote

  6. Salt - to taste

  7. Freshly-ground black pepper - to taste

  2. In a salad bowl toss arugula and red onion. Segment orange over a small bowl to catch juice. Add vinegar and vanilla oil to orange juice and season with salt and pepper. Pour dressing over greens and toss. Garnish with orange segments.
