  2. 6 medium potatoes

  3. 4 bacon slices

  4. 1 Tablespoon onion, chopped

  5. 1 celery stalk, chopped

  6. 1 teaspoon salt

  7. 2 Tablespoons butter

  8. 2 Tablespoons unbleached flour

  9. 1/2 teaspoon dry mustard

  10. 1 Tablespoon sugar

  11. 1 cup beer, any brand 1/2 teaspoon Tabasco hot pepper sauce

  12. 2 Tablespoons fresh parsley, chopped

  1. Boil potatoes in medium-size saucepan until just tender. Peel and slice.

  2. Fry bacon until crisp. Break into small pieces and mix with onion, celery and salt. Set aside.

  3. Stir melted butter and flour in a small saucepan until blended.

  4. Add mustard and sugar.

  5. Slowly stir in beer and hot pepper sauce.

  6. Bring to a boil, stirring constantly.

  7. Pour over potatoes.

  8. Sprinkle with parsley.

  9. Toss lightly and let stand 1 hour.

  10. Add bacon mixture.

  11. Toss gently and serve.
