  1. 750g braising or stewing beef

  2. 1l beef stock

  3. 2 large onions , sliced

  4. 2 garlic cloves , sliced

  5. large chunk ginger , peeled and cut into matchsticks

  6. 2 bay leaves

  7. 5 allspice berries

  8. 1 stick cinnamon

  9. 4 cloves

  10. 1 scotch bonnet chilli or red chilli, seeded and finely chopped

  11. 400ml coconut milk

  12. 3 big sprigs thyme

  13. 2 sweet potatoes , peeled and cut into large chunks

  14. 4 large new potatoes , peeled and cut into large chunks

  15. 100g kale , chopped

  16. crusty bread , to serve

  17. butter , to serve

  1. Put the first 9 ingredients in a large pot then season. Simmer gently for 30 minutes uncovered, skimming off any residue that comes on the surface.

  2. Add the chilli, coconut milk and thyme then cook for 1 hour. Add the potatoes and cook for another 1/2 hour. Add the kale and simmer for 10 minutes. Serve with crusty bread.
