  1. 1 can cream of chicken soup concentrate

  2. 8 ounces Colby cheese , grated

  3. 1/2 cup butter

  4. 1 small onion , finely chopped

  5. 1 teaspoon salt

  6. 1/2 teaspoon black pepper

  7. 2 pounds hash browns shredded Non-stick cooking spray

  1. Preheat oven to 350 degrees F. Spray a 13x9 inch baking pan with non-stick cooking spray; set aside.

  2. Into a bowl, mix together cream of chicken soup concentrate, grated Colby cheese, butter, onion, salt and pepper. Slowly fold in hash brown potatoes. Evenly pour into prepared pan.

  3. Bake into preheated oven for 35 to 40 minutes, until heated through and golden.
