  2. 4-5 leeks

  3. 1 tablespoon butter

  4. 1 quart mutton or beef stock

  5. Salt and pepper

  6. 6 preboiled potatoes, sliced

  7. Croutons

  1. Cut leeks into strips and fry in a little butter.

  2. Add to them a quart of good mutton stock; add salt and pepper to taste.

  3. Add potatoes cut into slices and boil all together until the leeks are thoroughly cooked.

  4. Serve in a tureen with croutons strewn over the top. .
