  1. 1 lb 454g / 16oz Fresh okra

  2. 3 tablespoons 45ml Ghee

  3. 1 1/2 tablespoons 22ml Coriander

  4. 1/2 teaspoon 2 1/2ml Cumin

  5. 1/2 teaspoon 2 1/2ml Hungarian paprika

  6. 1/2 teaspoon 2 1/2ml Garam masala

  7. 1/2 teaspoon 2 1/2ml Turmeric

  8. 1 teaspoon 5ml Salt

  1. Wash & thoroughly dry okra. Trim the bottom & top & slice into rounds half an inch thick. In a large skillet, heat the ghee & add the okra in a single layer. Cook over a moderate heat for 20 minutes. Stir occasionally. Add the spices & continue to stir & fry till the okra is golden brown. Remove from the heat, sprinkle with salt & serve.
