    1. 2 md Eggplants, halved

    2. 1/2 c Finely chopped onion

    3. 2 ea Green chilies, chopped

    4. 1/4 ts Salt

    5. 1/4 c Cilantro, chopped

    6. 1 tb Ghee

    7. 1/2 ts Oil

    1. Rub the ghee over the cut side of the eggplant.

    2. Roast until the skin is lightly burned.

    3. The eggplant should be completely soft & tender.

    4. Peel & mash the pulp with a potato masher.

    5. Mix well with onion, chilis, salt, cilantro & oil.

    6. Fry in a skillet with a little oil for 3 to 5 minutes.

    7. The mixture should be fairly dry.
