  1. 4 cups chicken stock -see link

  2. 1 cup water

  3. 3/4 teaspoon salt

  4. 1/4 teaspoon freshly ground black pepper

  5. 6 tablespoons instant Cream of Wheat

  6. 6 ounces spinach, stems removed, washed, and coarsely chopped

  7. 1/3 cup heavy cream

  1. Bring the stock, water, salt, and pepper to a boil in a saucepan. Add the Cream of Wheat. Mix well. Bring back to a boil, reduce the heat to low, and cook gently for 2-3 minutes, until thickened.

  2. Stir in the spinach. Bring the soup back back to a boil and cook 2 minutes. Stir in the cream, and serve immediately.
