  1. 8 ounces whole wheat rotini pasta

  2. 1/4 cup extra-virgin olive oil

  3. 1 medium onion, chopped

  4. 1 red bell pepper, thinly sliced

  5. 3 cloves garlic, minced

  6. 1 carrot, sliced

  7. 1 small yellow squash, sliced

  8. 1 cup broccoli florets

  9. 1/2 teaspoon ground black pepper

  10. 1/4-1/2 teaspoon crushed red pepper

  11. 1 1/2 cups small frozen cooked shrimp, thawed

  12. 1/2 cup grape tomatoes, halved

  13. 1/3 cup (1 1/3 ounces) freshly grated Parmesan cheese

  1. Prepare the pasta according to package directions. Drain and place in a large serving bowl. Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onion, bell pepper, and garlic and cook, stirring occasionally, for 3 minutes, or until lightly browned. Add the carrot, squash, broccoli, black pepper, and crushed red pepper. Cook, stirring constantly, for 5 minutes longer, or until crisp-tender. Stir in the shrimp and tomatoes and cook for 3 minutes, or until heated through. Pour over the pasta and sprinkle with the cheese.
