  7. 1 1/2 c Graham Cracker Crumbs

  8. 1/4 c Sugar

  9. 1/2 c Margarine, Melted

  10. 1 ea Env. Unflovored Gelatin

  11. 1/3 c Cold Water

  12. 1/3 c Lemon Juice

  13. 3 ea Large Eggs, Separated

  14. 1/2 c Sugar

  15. 1 t Grated Lemon Peel

  16. 16 oz Cream Cheese, Softened*

  17. Or use 2 8-oz containers of Philly soft cream

  18. cheese.

  20. -- Combine crumbs, sugar and margarine; reserve 1/2 cup. Press remaining onto

  21. bottom of 9-inch springform pan. Soften gelatine in

  22. water, stir over low heat until dissolved. Add juice,

  23. egg yolks, 1/4 cup sugar, and peel; cook, stirring

  24. constantly, over medium heat, 5 minutes. Gradually

  25. add to cream cheese, mixing at medium speed on

  26. electric mixer unitl well blended. Beat egg whites,

  27. until foamy; gradually add remaining sugar beating

  28. until stiff peaks form. Fold into cream cheese

  29. mixture; pour over crust. Top with reserved crumbs;
