  1. Mission Fig s - fresh or dry

  2. Date s - I used dry, but use fresh if you can find them!

  3. Good Blue Cheese

  4. Salt

  5. Pepper

  6. Prosciutto - very thin slices

  7. Balsamic Vinegar reduction

  8. Apricot jam

  1. Preheat oven to 350 degrees. Slice each fig or date on one side to make an opening for the cheese. Sprinkle each with salt and pepper. Using a teaspoon, stuff each fig or date with as much cheese as you like...I like it completely filled up. Press the date or fig closed and wrap it with one slice of prosciutto. Place wrapped figs/dates on on a baking sheet, split side up so you don’t loose all the cheese! Bake until prosciutto is lightly browned, about 20 minutes. Cool slightly before serving. Serve with a drizzle of good quality balsamic vinegar that has been reduced, or apricot jam that has been stirred to liquefy it.
