  2. 1 cup dry buttermilk baking mix

  3. 3.4 ounce package dry instant lemon pudding mix

  4. 1 large egg

  5. 1/4 cup vegetable oil

  6. 1/2 cup sugar

  1. Preheat oven to 350 degrees. Grease 2 large cookie sheets. Stir together baking mix, pudding mix, egg and oil in a large bowl until a dough forms. Roll the dough into 1 inch balls. Place the dough balls on the prepared pans, spacing 2 inches apart. Place the sugar in a small bowl. Dip the bottom of a glass into the sugar and press down the dough balls to 1/4 inch. Bake cookies about 10 minutes until golden brown on the edges. Transfer cookies to racks and cool completely. Store cookies in an airtight container at room temperature.
