  1. 1 box chocolate cake mix any variety plus ingredients to prepare as directed

  2. 1 14oz can cherry pie filling

  3. Frosting:

  4. 1 3oz brick cream cheese

  5. 1/2 cup butter

  6. 2 1/2 cups powdered sugar sifted

  7. 1 tsp vanilla

  1. Prepare and bake cupcakes as directed on box. While cupcakes are baking, puree cherry pie filling until smooth using blender or food processor. When cupcakes are finished baking, using a round wide tip and pastry bag or resealable bag, pipe pureed pipe filling into middle of cupcakes. Enter the cupcake in the top center at a straight angle and fill just until the filling starts to come back up. Let cool completely.

  2. While cooling, cream together cream cheese, butter, and vanilla, then add powdered sugar gradually forming a frosting. Frost cupcakes when completely cool. Yield: serves 24 Notes: One can of store bought cream cheese frosting can be substituted for the homemade.
