  1. INGREDIENTS:

  2. 2 tbsps cooking oil

  3. 1 big onion

  4. 2 tbsp lime juice

  5. 4 tsp curry powder

  6. 1 cup chicken broth

  7. 200gms boneless chicken

  8. 2 1/2 tsp ground ginger

  9. 1 small green pepper (chopped)

  10. 1 heaped tsp corn starch

  11. Coriander to garnish

  12. Salt to taste

  13. DIRECTIONS:

  14. Cut chicken into sma;ll pieces and marinate with 1 1/2 tsp ginger and oil

  15. Heat oil and fry thinly sliced onions till brown

  16. Put in marinated chicken and fry till golden

  17. Put in curry powder and fry for one more minute stirring constantly

  18. Add chicken broth; boil and simmer for 10 mins

  19. Blend corn starch, rest of ginger, lime jiuce in a small bowl and stir into mixture

  20. Continue cooking till mixture thickens and bubbles (approx. 1 min)

  21. Stir in tomato wedges and chopped capsicums and simmer 3 mins longer

  22. Garnish with coriander and serve with hot rice
