  2. 12 to 16 ounces dried rigatoni, penne, rotelle or pasta of choice

  3. 1/2 cup crumbled bleu cheese

  4. 2 tablespoons freshly-grated Parmesan cheese

  5. 2 tablespoons butter

  6. Freshly-ground black pepper

  1. Cook the pasta according to the package directions.

  2. Drain and return to the cooking pot.

  3. Add the remaining ingredients, adding the optional butter if a smoother sauce is desired.

  4. Gently stir to combine the ingredients and melt the cheeses.

  5. Serve immediately.
