  1. Artichokes in the Constantinople Style

  2. Anginares a la Polita

  3. 4 artichokes

  4. juice of 2 lemons

  5. 1 large onion, thinly sliced

  6. 160 ml olive oil

  7. 4 carrots, sliced

  8. 6 teaspoons dill

  9. 350 ml water

  10. 250 gr. potatoes, peeled and sliced

  11. salt and pepper

  12. Prepare the artichokes. Heat the olive oil in a large 25 cm wide

  13. saucepan. Drop the onions in and sweat them a little, stirring.

  14. Add the carrots and the dill and keep stirring for 2-3 minutes on

  15. low heat. Add the water and the juice of 1 lemon and slowly bring

  16. to boil. Then add the potatoes and artichokes. The artichoke hearts

  17. should be almost covered with the liquid in the saucepan, so if

  18. needed add a little more water. Sprinkle in some salt and black

  19. pepper, cover and simmer slowly for 40 minutes, according to the

  20. size of the artichokes.
