  1. 1 cup sliced radishes

  2. 1/4 cup cubed Swiss cheese

  3. 1 green onion, sliced

  4. 1-1/2 teaspoons tarragon vinegar

  5. 1/4 teaspoon minced garlic

  6. 1/4 teaspoon Dijon mustard

  7. 1/8 teaspoon salt Dash pepper

  8. 4 teaspoons olive oil Leaf lettuce, optional

  1. In a bowl, combine the radishes, cheese and onion. In a small bowl, combine the vinegar, garlic, mustard, salt and pepper; whisk in oil until smooth. Pour over radish mixture and toss to coat. Chill until serving. Serve on a bed of lettuce if desired. Yield: 2 servings.
