  2. 1 cup instant mashed potato flakes

  3. 1/3 cup grated parmesan cheese

  4. 1/2 teaspoon celery salt

  5. 1/4 teaspoon garlic powder

  6. 1/4 cup butter or margarine -- melted/cooled

  7. 2 eggs

  8. 4 cups raw bite-size vegetables -- your choice (to 5)

  9. peppers

  10. mushrooms

  11. broccoli cauliflower

  12. cauliflower

  13. zucchini

  14. parboiled carrots

  15. prepared ranch salad dressing or ranch dip

  1. In a small bowl, combine potato flakes, Parmesan cheese, celery salt, garlic powder and butter.

  2. In another bowl, beat eggs.

  3. Dip vegetables, one at a time, into egg, then into potato mixture; coat well.

  4. Place on an ungreased baking sheet.

  5. Bake at 400 F. for 20-25 minuutes. Serve with dressing or dip if desired.
