  2. 2 small eggplants, pierced with fork

  3. 1 small onion, chopped

  4. 2 cloves garlic, minced

  5. 3 tablespoons fresh lemon juice

  6. 3 tablespoons fresh parsley (or 2 teaspoons dried)

  1. Directions :

  2. Preheat oven to 450ºF.

  3. Place whole eggplants in baking dish; bake for 40 minutes or until very soft, turning once. Remove from oven, cut in half and let stand until cool enough to handle. Scoop out pulp.

  4. In food processor, place eggplant pulp, onion, garlic, lemon juice and parsley. Process until smooth.

  5. Serves 6.
