  1. 2 Squirrels - cut serving pieces

  2. Seasoned flour

  3. 1/4 cup 40g / 1.4oz Rice

  4. 1 Green bell pepper - minced

  5. 1 Onion - minced (small)

  6. 1/2 cup 55g / 1.9oz Chopped celery

  7. 1 cup 146g / 5.1oz Diced tart apple

  8. Boiling water - as needed

  1. Roll pieces of meat in seasoned flour and put into a well-greased, large shallow casserole. Sprinkle on the rice, green pepper, onion, celery, and apple. Barely cover with boiling water. Cover the dish tightly with a double thickness of foil and bake at 300 degrees for about 1 hour, or until tender.

  2. This recipe yields 4 servings.
