  2. LIGHTENED MAPLE SYRUP

  7. 4 c Pure maple syrup

  8. 5 1/2 c Water

  9. 6 tb Kuzu or cornstarch

  10. 3-quart saucepan, mix maple syrup with

  11. 4-1/2 cups

  12. water and bring to a simmer.

  13. In a small bowl, mix remaining one cup of water with

  14. kuzu.

  15. Remove syrup from heat and vigorously whisk kuzu

  16. mixture into syrup.

  17. Return mixture to heat and simmer for about 5 minutes

  18. to thicken.

  19. Serve warm or at room temperature. Refrigerate unused

  20. portion.

  22. 1/4 cup:

  24. 23 g prot,

  25. 5 g sod,

  26. 1 g carb,

  27. 0 mg chol,

  28. 10 mg calcium

  29. HINT: Arrowroot should not replace kuzu in this recipe

  30. because it may produce a gelatinous effect.
