  1. Lamington Sponge

  2. 3 eggs, separated

  3. 1/2 cup castor sugar

  4. 1 cup self-rising flour

  5. 1 level tablespoon cornflour (cornstarch)

  6. 1 teaspoon butter

  7. 3 tablespoons boiling water

  8. Line a lamington tin with greaseproof paper. Beat egg whites until

  9. stiff, then gradually beat in sugar. Fold in yolks, then add sifted

  10. flour and cornflour. Dissolve butter in boiling water and fold

  11. through. Pour into the prepared tin and bake in a moderate oven

  12. for 20 minutes. Allow to stand for a few minutes, then turn out

  13. onto a cooler.
