  6. 2/3 cup sugar

  7. 1 unflavored gelatin

  8. 1 cup water

  9. 2 teaspoons lime peel -- grated

  10. 1/4 cup lime juice

  11. 3 drops green food color -- optional

  12. 4 egg whites

  13. 1/2 teaspoon cream of tartar

  14. 4 egg yolks

  15. 1 cup 2% lowfat milk

  16. 1/4 cup sugar

  17. 2 tablespoons orange juice, frozen concentrate

  18. lime slice -- for garnish

  19. In small saucepan, stir together sugar and gelatin. Stir in water. Cook

  20. over medium heat, stirring constantly, until gelatin is dissolved, about 5

  21. minutes. Stir in peel, juice and food color, if desired, until blended.

  22. Chill, stirring occasionally, until mixture mounds when dropped from a

  23. spoon. In small mixing bowl, beat egg whites with cream of tartar at high speed just

  24. until whites no longer slip when bowl is tilted. Gently, but thoroughly,

  25. 1-quart mold or 8 to

  26. 10-ounce

  27. Just before serving, unmold onto dessert plate (s).

  28. To make Orange Custard Sauce:

  29. In small saucepan, beat together egg yolks, milk and sugar. Cook over low

  30. heat, stirring constantly, until mixture is thick enough to coat a metal

  31. spoon and reaches 160F degrees. Remove from heat. Stir in orange juice

  32. concentrate. Cool quickly by setting pan in bowl of ice or cold water and stirring for a few minutes. Cover and chill thoroughly. Spoon sauce around

  33. rim of plate (s) or pass sauce. Garnish with lime slices, if desired.
