  1. 1 1/2lb Pork, coarsely ground

  2. 2 tb Peanut oil

  3. 1 1/2tb Fermented black beans

  4. 2 tb Coarsely chopped garlic

  5. 1 ts Finely chopped fresh ginger

  6. 2 Scallions, finely chopped

  7. 1 1/2tb Light soy sauce

  8. 2 tb Chinese rice wine -

  9. 1/4ts Sugar

  10. 1 pn Salt

  11. 1/2c Chicken broth

  12. 1 tb Cornstarch; dissolved in

  13. 2 tb Chicken broth; (cold)

  14. 1 Egg; beaten with

  15. 2 ts Sesame oil

  1. + Directions : BROWN THE GROUND PORK in 2 tablespoons of oil. Add the rest of the sauce ingredients. Bring them to a boil and add the cornstarch to thicken the sauce lightly. Turn off the heat. Stir in the beaten egg, pulling the clumps of egg into thin strands with chopsticks as they cook. Makes 3 Cups
