  2. CUCUMBER PICKLES

  8. 3 c Cucumbers, thinly sliced

  9. 1/3 c Onion, chopped

  10. 1/2 c Red wine vinegar

  11. 2 ts Sugar

  12. 1/4 ts Salt

  13. 4 ea Red chili peppers, seeded

  14. 1 tb Cilantro leaves

  15. --PICKLE B--

  16. 3 c Cucumbers, sliced thinly

  17. 1/2 sm Onion, sliced thinly

  18. --A MIXTURE--

  19. 2 ea Red chili peppers, seeded

  20. 2 ts Garlic, chopped

  21. 2 ts Cilantro root, chopped

  22. 2 ts Peppercorns, whole or ground

  23. --B MIXTURE--

  24. 1/2 c Vinegar

  25. 2 tb Soy sauce

  26. 1 1/2 ts Sugar

  27. 1 tb Cilantro leaves, chopped

  28. 1/2 c Peanuts, crushed

  29. PICKLE A: Combine all ingredients & serve.

  30. PICKLE B: Place cucumber & onion in a bowl & toss.

  31. Place A MIXTURE in a blender or food processor & blend

  32. to make a rough paste. Blend the B MIXTURE, then mix

  33. together A & B. Immediately pour over the cucumbers &

  34. sliced onion. Place in a serving dish & sprinkle with

  35. the cilantro leaves & crushed peanuts. Serve

  36. immediately. To make it hotter add more red pepper or a shake or two of cayenne. - - - - - - - - - - - - - - - - - -
