  1. 2 tsp canola oil

  2. 2 cloves garlic, finely chopped

  3. 1 cup finely chopped onion

  4. 3/4 pound lean Italian-style chicken sausage, casings removed and crumbled

  5. 8 ounces sliced mushrooms

  6. 1 14 1/2 ounce can diced tomatoes

  7. 1 cup fat-free, low-sodium beef broth

  8. 2 cups baby spinach

  9. 1 cup lentils, picked through

  1. Heat oil in large skillet. Sauté onions and garlic until softened. Brown sausage meat until no longer pink. Add mushrooms, and cook for 2-3 minutes. Stir in canned tomatoes, broth and lentils. Simmer for 25-35 minutes. Stir in spinach and cook for 5 more minutes, until lentils are tender.
