  1. 2/3 cup hot water

  2. 1/3 cup white vinegar

  3. 1/2 teaspoon salt

  4. 1/2 teaspoon sugar

  5. 1 cucumber, peeled, seeded and thinly sliced crosswise

  6. 1 shallot, peeled and thinly slices

  7. 1 1/2 teaspoon finely minced jalapeno pepper

  8. 2 tablespoons chopped cilantro

  9. 8 sliced white bread

  10. 6 slices smoked salmon

  1. In a bowl, combine water, vinegar, salt and sugar. Stir in the cumber, shallot, jalapeno and cilantro. Allow the mixture to marinate for at least 1 hour before using or cover and keep for up to 2 weeks in the refrigerator.

  2. At serving time, toast the bread. Drain the cucumbers and arrange half of them on four slices of toasted bread. Place the salmon slices on top and top with the remaining cucumbers.

  3. Place the remaining pieces of toast on top and trim off the crusts. Cut each sandwich in half to create two rectangles. Serve immediately.
