  1. 1 pound thick-cut bacon

  2. 2/3 cup brown sugar

  3. 1/4 teaspoon pepper

  1. Preheat oven to 425 degrees F. Place a rack in a cookie sheet with sides. Top with foil; poke holes in the foil to let the bacon drain. Place bacon in a single row on the foil. It's important that the cookie sheet have sides to hold rendered fat.

  2. Sprinkle evenly with the brown sugar and sprinkle with pepper. Bake for 20-26 minutes until bacon is crisp and deep golden brown. Let cool 1 minute, then remove from pan and let cool 3-4 minutes on wire rack. Serves 6-8
