  1. 1 tablespoon 15ml Butter or margarine

  2. 8 oz 227g Fresh mushrooms - sliced

  3. 5 cups 312g / 11oz Chicken - cooked, cubed

  4. 1 Cream of chicken soup - undiluted (10 3/4 oz.)

  5. 1 cup 237ml Sour cream - (8 oz.)

  6. 1 Pimiento - drained and diced (2 oz.)

  7. Topping

  8. 1/2 cup 99g / 3 1/2oz Butter or margarine

  9. 1 1/3 cups 263g / 9 1/3oz Butter flavored crackers - finely crushed

  10. 2 teaspoons 10ml Poppy seeds

  1. In a skillet, melt butter. Saute mushrooms until tender. Stir in chicken, soup, sour cream, and pimiento; mix well. Spoon mixture into a greased 2 quart casserole.

  2. In a small bowl, combine all topping ingredients. Sprinkle over the chicken. Bake at 350 degrees for 20 minutes.
