  1. 1/2 cup packed brown sugar

  2. 1/2 cup white sugar

  3. 1/2 cup shortening

  4. 1 egg

  5. 2 cups sifted all-purpose flour

  6. 1 teaspoon baking soda

  8. 1/2 teaspoon ground nutmeg

  9. 1/2 teaspoon ground cloves

  10. 1/4 teaspoon salt

  11. 1 cup grated zucchini

  12. 1 cup raisins

  13. 1/2 cup chopped walnuts

  1. Preheat oven to 325 degrees F (165 degrees C). Grease cookie sheets. Cream together shortening, brown sugar, and white sugar until smooth. Beat in egg. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the creamed mixture. Mix in zucchini, raisins, and walnuts. Drop by rounded tablespoons onto the prepared baking sheets. Bake 15 minutes in the preheated oven, or until lightly browned. Cool on the cookie sheets for a few minutes before removing to wire racks to cool completely.
