  1. 3 Bacon - cut in

  2. 1/2" pieces

  3. 1 cup 62g / 2 1/5oz Onion - finely chopped

  4. 1 cup 93g / 3 1/3oz Red bell pepper - seeded and minced (small)

  5. 1 Celery - finely minced

  6. 2 Garlic - peeled and minced

  7. 4 cups 250g / 8.8oz Frozen corn kernels - thawed

  8. 1 cup 62g / 2 1/5oz Canned tomatoes - broken up

  9. 3/4 teaspoon 3.8ml Paprika

  10. 1 teaspoon 5ml Dried basil - crushed

  11. 1/4 teaspoon 1 1/3ml Dried thyme - crushed

  12. 1/4 teaspoon 1 1/3ml Ground red - (cayenne) pepper

  13. 1/2 teaspoon 2 1/2ml Salt Freshly ground pepper to taste

  14. 1 tablespoon 15ml Lime juice

  1. Recipe Instructions Put bacon into saucepan, set over medium heat and fry until crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate. Crumble bacon; set aside. Add onion, bell pepper, celery and garlic to pan. Saute 3 minutes. Cover pan; cook 5 minutes. Add corn, tomatoes, paprika, basil, thyme, cayenne, salt and pepper. Cook over medium heat, stirring often, for 5 minutes or until corn is heated through and flavors have blended. Add bacon and lime juice. Stir 1 minute; serve.
