  1. Brown-Butter Butterscotch Pie

  2. Baked 9" pie shell

  3. 6 tablespoons butter

  4. 1 cup dark brown sugar

  5. 1 cup boiling water

  6. 3 Tablespoons cornstarch

  7. 2 Tablespoons flour

  8. 1/2 teaspoon salt

  9. 1 2/3 cups milk

  10. 3 egg yolks, slightly beaten

  11. 1 teaspoon vanilla

  12. Whipped cream or meringue

  13. Melt butter in heavy skillet over low heat, watching carefully.

  14. When golden brown, add brown sugar; cook, stirring constantly,

  15. until mixture comes to a boil. Stir in water and remove from heat.

  16. In saucepan mix cornstarch, flour, and salt. Blend in milk, stirring

  17. until smooth. Stir in brown sugar mixture. Cook over medium heat,

  18. stirring constantly, until mixture comes to a boil. Boil 1 minute

  19. longer, remove >from heat.

  20. Stir a little of hot mixture into egg yolks, then blend yolks into hot mixture. Boil 1 minute. Remove from heat. Add vanilla.

  21. Chill, stirring occasionally.

  22. Pour into pie shell and chill. Spread with whipped cream just

  23. before serving or top with meringue. If you opt for meringue, you

  24. need not cool the filling before pouring it into the pie shell.
