  1. 1 medium onion, finely chopped (about 1 cup)

  2. 2 cloves garlic, minced (1 tsp)

  3. 1 tbsp minced ginger

  4. 3/4 pound extra-lean ground beef

  5. 1 tbsp Thai red curry paste

  6. 1 14 1/2 ounce can crushed tomatoes

  7. 2 tsp brown sugar

  8. 1 tbsp fish sauce or reduced-sodium soy sauce

  9. 1/2 cup lite canned coconut milk

  1. Preparation: Coat a large skillet with nonstick cooking spray. Saute onions, garlic and ginger on medium heat, until softened—about 3-4 minutes. Crumble ground beef and cook until no longer pink. Drain beef. Add red curry paste, canned tomatoes, sugar, fish sauce (or soy), and coconut milk. Simmer for 10-15 minutes.
