  1. eggs, beaten

  2. 1/2 c. sugar

  3. 2 tbsp. flour

  4. 1 1/2 c. boiling water

  5. 1 tsp. vanilla

  6. Baked pie crust (purchased or homemade)

  7. Fresh peaches, sliced (or fruit of your choice)

  1. Line baked pie crust with fresh fruit. (Peaches work well.) Mix eggs, sugar and flour. Gradually add 1 1/2 cups boiling water to egg mixture, stirring. Cook over medium heat until thickened, stirring occasionally. Remove from heat and add vanilla. Pour over lined pie crust and chill.
