  1. 1/2 lb 227g / 8oz Dried apricots

  2. 1/2 lb 227g / 8oz Dried pears

  3. 1/2 lb 227g / 8oz Unsweetened prunes

  4. 3 lbs 1362g / 48oz Brisket

  5. 2 teaspoons 10ml Salt

  6. 1/4 teaspoon 1 1/3ml Pepper

  7. 3 Carrots - quartered

  8. 6 Lime or lemon (thin slices)

  9. 2 cups 474ml Orange juice

  10. 4 cups 948ml Water

  11. 4 tablespoons 60ml Honey

  1. Recipe Instructions Wash the apricots, pears and prunes and soak in cold water to cover for 1 hour. Drain. Brown the meat over medium heat in a Dutch oven or casserole. Sprinkle with the salt and pepper. Arrange the fruit, carrots and lime or lemon around it. Mix the orange juice, water and honey together and pour over all. Cover and bake in a 350 degree oven 3 hours. Remove the cover and increase heat to 400 degrees. Bake 1 hour longer, adding a little water if necessary. Serves 6 to 8.
