  7. 3/4 cup sugar

  8. 3 tablespoons cornstarch

  9. 3 cups half-and-half

  10. 4 egg yolks

  11. 1 tablespoon unsalted butter

  12. 1 vanilla bean split

  13. 1 cup -- crushed vanilla wafers

  14. 2 cups raspberries

  15. 5 mint sprigs, -- for garnis

  16. In a saucepan combine sugar and cornstarch. Stir in half-and-half. Cook,

  17. stirring, over medium heat

  18. until mixture thickens. In a small bowl beat egg yolks. Gradually add half of

  19. cream mixture to yolks,

  20. stirring constantly. Return egg mixture to saucepan and heat just to simmering.

  21. Reduce heat and simmer 2 minutes more, stirring all the while. Remove from heat and stir in

  22. butter. Pour custard into 4 small ramekins, about 1/2 cup capacity. Top each with vanilla wafers and raspberries. Cover with

  23. plastic wrap and refrigerate until ready to serve. Garnish with mint leaves. Yield: 4 serving - - - - - - - - - - - - - - - - - -
