  1. CRISP SAUTEED MUSHROOMS

  2. 1 lb large whole fresh mushrooms

  3. Brush off mushrooms and slice into 1/4" slices from the top down,

  4. including the stems.

  5. With a fine mist spray bottle, mist the mushrooms to just barely

  6. dampen.

  7. 1 or cups of flour. Stir well or shake very gently.

  8. In a large, well seasoned cast-iron skillet or a commercial quality

  9. 1/2 stick of fresh unsalted butter and 300-325 degrees.

  10. Drop the mushrooms into a colander to remove excess flour. Drop

  11. a few at a time into the butter/oil and coat each well. Continue

  12. 'til all the mushrooms are in the skillet. Turn down the heat to

  13. the saute level and continue to cook, turning frequently. After

  14. a few minutes add salt and pepper to taste.

  15. Continue to cook until the degree of crispness is achieved.
