  1. 8 oz 227g Fruit cocktail - (1 can)

  2. 1/4 cup 49g / 1.7oz Butter or margarine - softened

  3. 1/3 cup 65g / 2 1/3oz Sugar

  4. 1 Egg - large

  5. 1/4 teaspoon 1 1/3ml Vanilla

  6. 1 1/4 cups 78g / 2.8oz Flour - unbleached

  7. 1/4 teaspoon 1 1/3ml Baking powder

  8. 1/4 teaspoon 1 1/3ml Baking soda

  9. 1 tablespoon 15ml Maraschino cherry juice

  10. 1/2 cup 46g / 1.6oz Coconut - flaked

  11. 1/4 cup 15g / 1/2oz Maraschino cherries - chopped

  1. Drain fruit; reserve 1/3 cup of syrup. Chop fruit; set aside. Cream butter and sugar; beat in egg and vanilla. Stir flour with baking powder, soda and 1/4 t salt.

  2. Mix reserved syrup with cherry syrup. Add flour mixture alternately with syrups to creamed mixture; mix well. Stir in fruit, coconut, and cherries.

  3. Spread in greased 9 X 9 X 2-inch baking pan.

  4. Bake at 350F for 30 to 35 minutes. Cool.

  5. If desired, sift powdered sugar over top and cut into bars.

  6. Makes 24 bars.
