  1. Lime Chicken Thighs

  2. 6 to 8 skinless chicken thighs, bone-in

  3. 1 1/2 tablespoons olive oil

  4. 1 1/2 tablespoons butter

  5. 2 tablespoons lime juice

  6. 1 tablespoon parsley flakes

  7. 1 1/2 tablespoons jalapeno jelly, melted

  8. salt and pepper to taste

  9. In heavy skillet brown chicken in olive oil and butter for 15

  10. minutes, turning every 5 minutes. Remove to baking dish and season

  11. with salt and pepper. Cut 3 slits into each thigh and brush on

  12. 30 minutes at

  13. 350F. Remove to serving dish and top with

  14. lime juice and parsley.
