  5. To prepare pan:

  6. 2 tb Butter

  7. 1 tb All-purpose flour

  8. For cake:

  9. 4 Eggs; room temperature

  10. 2/3 c Granulated sugar

  11. 2 ts Vanilla

  12. 2/3 c All-purpose flour

  13. 1/3 c Cake flour

  14. 1/2 c Plus

  15. 2 tb Unsalted butter

  16. 1 1/4 sticks

  17. For meringue mushrooms

  18. Filling and frosting:

  19. 3 Egg whites

  20. 1/4 ts Cream of tartar; scant

  21. 1 1/3 c Granulated sugar

  22. 12 oz Semisweet chocolate; baking

  23. 1/3 c Black coffee; strong

  24. 1 tb Vanilla

  25. 1/2 c Butter; (1 stick) divided

  26. -- room temperature

  27. Unsweetened cocoa powder

  28. Powdered sugar

  30. Preheat oven to 375 degrees. To prepare pan: Spread a sheet

  31. of waxed paper on a 12-by-16-inch jelly-roll pan, letting

  32. it hang over each short end by 2 inches. In small saucepan,

  33. lightly brown butter. Remove from heat; stir in flour. Use

  34. butter mixture to lightly paint waxed paper and long sides

  35. of pan.

  36. To prepare cake: With electric mixer on medium speed, beat

  37. eggs while gradually adding granulated sugar. Add vanilla;

  38. beat at high speed for 5 minutes or until eggs have doubled

  39. in volume. Sift all-purpose flour and cake flour into egg

  40. mixture by thirds, folding in gently and alternating with

  41. melted butter. Immediately pour batter into prepared pan.

  42. 12 to 15 minutes, until top barely changes color and is light and springy to the touch. Do not overbake, or cake will be hard to roll.
