  6. --CRUST--

  7. 4 oz Butter

  8. 1 1/2 c Graham cracker crumbs

  9. 3 oz Sugar

  10. --FILLING--

  11. 24 oz Philadelphia cream cheese

  12. 2 1/2 cn Eagle Brand sweetened

  13. Condensed milk

  14. 6 oz Fresh lemon juice

  15. 2 ts Vanilla extract

  16. Crust: Melt butter in saucepan. Place cracker crumbs

  17. and sugar in mixing bowl.Add melted butter. Mix well.

  18. Place crust mixture into 10-inch spring form pan.

  19. Spread evenly. Pack down firmly.

  20. Filling: Whip cream cheese until soft and smooth,

  21. using electric mixer. Add condensed milk and blend

  22. until very smooth. With spatula, blend in lemon juice

  23. and vanilla extract until thoroughly mixed. Pour

  24. blended mixture into spring-form pan and smooth top

  25. with spatula.

  26. 8 hours until firm

  27. Serve with fresh fruit topping (example: strawberries

  28. marinated in icing sugar and any liqueur, such as

  29. Grand Marnier or Amaretto).
